Sweet and Sour Chicken with Fried Rice

Do you have the same problem as I have?
Every day I asked BigBoy or hubby or even myself: What should I cook today?
You know the answer? Don't you?

I don't know ...
Do you want this?
No ...
Do you want that?
No ... we had that last week.
So, what do you want?
I want Spaghetti!!
No, BigBoy we have Spaghetti like, everyday. If you could, you would eat Spaghetti for breakfast.

Yes, this is my everyday conversation because of lunch.
And sooner or later LittleBoy will say the same.

But today I asked nobody, except for myself, and I made Sweet and Sour Chicken with Fried Rice.
It was mjami ...
And BigBoy even ate the rest for dinner. So nothing is left. 


Here you go, the recipe. It's worth a try.



Sweet and Sour Chicken

Ingredients:

3-5 chicken breast
1 cup cornstarch
2 eggs, beaten
salt
pepper
olive oil or vegetable oil

For the sauce:

3/4 cup white sugar
4 tablespoons ketchup
1/2 cup white vinegar
1 tablespoon soy sauce
1 teaspoon garlic, chopped
1 tablespoon honey

Instructions:

Cut the chicken into 2-3 cm cubes. Season with salt and pepper. In a bowl mix the chicken with the cornstarch. Beat the eggs and coat the meat with it.
Heat some oil in a pan and cook chicken until browned.
Place in baking dish.
Sauce: Whisk the ingredients except the honey until smooth. Pour it over the chicken. Turn the chicken, so the sauce gets on both sides.
Put it in the oven at 180°C for 15 minutes. Pour over the honey, turn the chicken and cook it for 15 minutes more.




Zutaten:

3-5 Hühnerbrüste
1 Cup Maisstärke
2 Eier, verrührt
Salz
Pfeffer
Olivenöl oder Pflanzenöl

Für die Sauce:

3/4 Cup Kristallzucker
4 Esslöffel Ketchup
1/2 Cup heller Essig
1 Esslöffel Sojasauce
1 Teelöffel Knoblauch, gehackt
1 Esslöffel Honig

Zubereitung:

Schneide die Hühnerbrust in 2-3 cm große Stücke. Würze sie mit Salz und Pfeffer. In einer Schüssel mixe die Maisstärke mit dem Huhn. Verrühre die Eier und bedeckte das Fleisch damit.
Wärme etwas Öl in einer Pfanne auf und koche das Huhn bis es braun ist.
Gib es in eine kleine Auflaufform.
Sauce: Verrühre alle Zutaten, außer den Honig. Leere es über das Huhn. Drehe das Huhn, damit die Sauce auf beide Seiten gelangt.
Gib es in den Ofen bei 180°C für 15 Minuten. Leere den Honig darüber, drehe das Huhn um und koche es für weiter 15 Minuten.




Fried Rice

Ingredients:

2 cups water
1 cup rice
2 handfull peas-carrott-mix
1 onion
1 egg, beaten
2 tablespoons soy sauce
salt
olive oil or vegetable oil

Instructions:

Boil 2 cups water, add salt and rice. Cook the rice for about 15 minutes. Or cook the rice as instructed.
Defrost the vegetables, chop the onion and brown it. Beat the egg and pour it in the pan. Add the finished rice and brown it. Add the soy sauce and brown it some more. If needed add some salt.



Zutaten:

2 Cups Wasser
1 Cup Reis
2 händevoll Erbsen-Karotten-Mix
1 Zwiebel
1 Ei, verrührt
2 Esslöffel Sojasauce
Salz
Olivenöl oder Pflanzenöl

Zubereitung:

Bring das Wasser zu kochen und füge Salz und Reis dazu. Koche den Res für ungefähr 15 Minuten. Oder koche den Reis nach Anleitung.
Taue das Gemüse auf, hacke die Zwiebel und röste alles an. Verrühre das Ei und leere es in die Pfanne. Füge den fertigen Reis dazu und röste alles gut an. Füge die Sojasauce dazu und röste noch etwas mehr an. Wenn nötig, füge etwas Salz hinzu.

Oven Potato

I love potatoes and this one's just perfect.


Oven Potato


Ingredients:

large potato
cheese
whipping cream
bacon
salt
yoghurt
herbs

Instructions:

Preheat the oven to 200°C.
Cut the potato nearly to the bottom. Salt the in betweens and put the cheese in it. Pour some whipping cream on the potato. Bake for about 20 minutes. The potato should be done.  Dice the bacon. Put the bacon in the potato and bake for some more minutes. Grate lots of cheese and put it on the potato. Bake till the cheese is melted and browned. 
So out of the oven and garnish it with a yoghurt-herbs-sauce.

BBQ

Haven't posted in a while, but I think it's about time.

So we had BBQ, almost 5 weeks ago.
My hubby´s cousin asked me to blog some recipes, so here they are. :)
We like to have a good Potato Bread with our BBQ. Lot of sauces and don't forget the potato salad. :) And of course meat. Wings, chicken breasts, sausages and ribs. But the spare ribs recipe is coming another time. Oh how I love my spare ribs......

Let's start with the



Potato salad

Ingredients:

600 g waxy potatoes
60 g red onions
1/4 l soup (just make a soup with a soup coup, should be really spicy)
3 tablespoons vinegar
6 tablespoons vegetable oil
1/2 teaspoon mustard (Estragon)
salt
pepper
sugar

Instructions:

Boil the potatoes. Cool them down, just a bit, they still need to be warm. Peel them.
Make the soup and chop the onions. Put all ingredients in a boil, except for the potatoes. Stir them together. Then slice the potatoes into the bowl. Mix cautiously. Add some salt, pepper or sugar if needed. 
You can eat the salad warm, at room temperature, or cold from the fridge.




Hot Onion Sauce

Ingredients:

300 g greek yoghurt
1/2 onion
2-3 teaspoons ketchup
cayenne pepper
salt 

Instructions:

Put all ingredients together. Use as much cayenne pepper as you like. Depends on how hot you like it.









Herb-Garlic Sauce

Ingredients:

300 g greek yoghurt
1-2 garlic cloves
1 tablespoon herbs (either you take fresh from the garden, chives, rosemary, thyme, sage, basil, oregano,... or you just take it out of your freezer)
herbal salt
pepper

Instructions:

Press the garlic through the garlic crusher and mix everything together.





Chicken Wings

Ingredients: for 12 wings

2 tablespoons honey
10 tablebspoons soy sauce
7 tablespoons Sweet Chilli Sauce
1 tablespoon olive oil

Instructions:

Cook the wings for about 10 minutes in water. 
Put all ingredients for the marinade together in a bag. Put the wings to the marinade when they cooled down and shake it. 
It's best to leave them over night in the fridge.









Chicken Breasts

Ingredients: for 12 breasts

15 tablespoons olive oil

1/2 tablespoon BBQ salt

herbs (fresh or frozen, same like in the herb-garlic sauce recipe)
salt
pepper
Lemon zests of 1/2 lemon

Instructions:

Put all ingredients in a bag and shake it. Leave it over night in the fridge.

Spreads

Last week I made some spreads and bread for a festivity in Tobi´s kindergarten. And as I wanted to put those recipes on my blog but hadn´t any pictures, I made some this time and here are the recipes.

Mjami...fresh spreads with fresh bread. Sooo delicious.






Liptauer

Ingredients:

500 g curd cheese
250 g butter (room temperature)
100 g sour cream
1 onion
1 garlic clove
1 red paprika
4 small pickles
3 tablespoons paprika powder
1 tablespoon tomato purée
 2 tablespoons mustard
salt
pepper
(cayenne pepper, if you like it hot)

Instructions:

Mix the curd chesse, butter and the sour cream. Chop the onion, garlic, red paprika and pickles. Mix them with the curd cheese mix and ad the rest of the ingredients. 
Let the Liptauer rest for about 2 hours in the fridge.



Egg Spread

Ingredients:

5 eggs 
100 g butter (room temperature)
250 g curd cheese
50 g sour cream
1 tablespoon mustard
salt 
papper
chives

Instructions:

Boil the eggs. Peel the eggs when they are still warm. Separate the yolk from the egg white.
Mix the hot yolk with butter. Mix the curd cheese, sour cream, mustard, salt and pepper with the yolk mix. Chop the egg white and the chives and put them to the rest.


Herb Spread

Ingredients:

250 g curd cheese
100 g butter (room temperature)
50 g sour cream
fresh herbs or frozen herbs
salt
pepper
herb salt

Instructions:

MIx the butter with the sour cream. Chop the herbs and put the rest of the ingredients in the butter mix.

Homemade Fries

Who doesn't like fries?
Everyone does!
Sometimes I just like to eat them and nothing else, no burger, no, sausages. Just fries ...
But you should know me. I don't buy fries. No, no ...
I make homemade fries. And If you eat them once you'll probably never buy any again. They even take about the same time to make.
I think one of the best things about those fries is, that you can just make them with salt or with any seasonings you like.
Hubby prefers those with paprika powder, but you could also use some mexican seasoning mix or whatever you have at home.
Eat them with ketchup, garlic-dip, mayonnaise or whatever you prefer.




Homemade Fries

Ingredients:

750 g potatoes
3 tablespoons olive oil
3 tablespoons paprika powder (or any seasoning)
salt

Instructions:

Peel the potatoes and cut them in stripes as wide as a finger. Cook the potatoes for about 5-8 minutes. Put them out of the water and let them evaporate.
Preheat the oven to 220°C.
Put in a bowl the oil, paprika powder and the salt. Mix everything with the potatoes and put them on a parchment covered baking tray.
Bake the fries for about 35-45 minutes till they are crispy.
Finished and ready to eat.



Zutaten: 

750 g Kartoffeln
3 Esslöffel Olivenöl
3 Esslöffel Paprika Pulver (oder anderes Gewürz)
Salz

Zubereitung:

Schäle die Kartoffeln und schneide sie in fingerdicke Streifen. Koche sie für ungefähr 5-8 Minuten. Aus dem Wasser geben und gut abdampfen lassen.
Heize den Ofen auf 220°C vor.
Gib in eine Schüssel das Öl, Paprikapulver und Salz. Mixe alles mit den Kartoffeln und gib sie auf ein mit Backpapier belegtes Blech.
Backe die Pommes für ungefähr 35-45 Minuten, bis sie knusprig sind.
Fertig und bereit, um gegessen zu werden.
