Oreo-Cheesecake-Bars

I was searching the internet for new cheesecake recipes and found this one. And I thought, OMG...Oreos and Cheesecake...this is going to be my death. Especially cause I try to loose some weight. But there are always too many good things I want to try. But gladly BigBoy and hubby do a good job in eating everything away.

So this dessert is for all Oreo and Cheesecake lovers...



Oreo-Cheesecake-Bars

Ingredients:

For the Crust:
23 Oreos
2 tablespoons butter, melted

For the Cheesecake:
340 g cream cheese, room temperature
1 cup granulated sugar
3 eggs, room temperature
6 tablespoons sour cream
1 1/2 teaspoons vanilla extract
12 Oreos, coarsely chopped

Instructions:

Preheat the oven to 165° C. Line a 20x20 cm baking pan with parchment paper.
For the Crust, process the Oreos in a food processor until they are turned into fine crumbs. drizzle the melted butter over the crumbs and stir them until everything is moist. Dump the crumbs into the baking dish and press into an even layer. Bake for 10 minutes.
For the Cheesecake, beat the cream cheese until smooth. Gradually add the sugar and beat until incorporated.
Slowly ad the eggs, one at the time. Scrape down the sides of the bowl and add the sour cream and vanilla extract.
Gently fold in the chopped Oreos, then pour the batter over the prepared crust. Bake until the edges are set but the middle still jiggles slightly, about 40 to 50 minutes.
Let it cool to room temperature, then cover the pan and place it in the refrigerator for 24 hours. 
But trust me, nobody can wait that long...
