Once a Week a new Recipe - Melting Moments Cookies

One week's already over.
Gosh...that was fast. Where did this week go?
Let's see what this week's experiment is doing. *checkingtherefrigerator*
I should probably try the recipes before I make it on Saturday. But actually that's what I wanted to do. Try something new. 
But somehow I always choose something that takes longer in the making. But not for one day, as my Gummies should have stayed in the refrigerator. I was never really able to finish them.
By the way, the other experiment, the Gummy Candies, went totally wrong. They melted away as I took them out of the refrigerator. Mhmmm...maybe I should look if I did something wrong.
Anyway...I think this one is really better. At least the dough in the refrigerator taste good.

Eventually these cookies are called Melting Moment Cookies, because they melt away in your hands when you form them. :D
My hands are all sticky. I washed them for sure before I typed this. 

Some more minutes and they are ready. ;)

Melting Moments Cookies

Ingredients:

195 g flour
60 g cornstarch
1/4 teaspoon salt
30 g powdered sugar
227 g butter, room temperature
1 teaspoon vanilla extract

Instructions:

In a bowl, whisk together the flour, cornstarch and the salt. Set aside.
In another bowl, beat the butter and sugar until light and fluffy. Beat in the vanilla extract. Add the flour mix and beat until incorporated. Cover and refrigerate the dough for at least one hour or until firm.

Preheat the oven to 175°C. Line a baking sheet with parchment paper.

When the dough is firm, form into 2,5 cm balls and place the cookies on the prepared baking sheet spacing about 2,5 cm apart. Bake for 12-15 minutes or until the edges of the cookies start to brown. Remove from the oven and place it on a wire rack to cool. Sprinkle the cookies with sugar. 



And now I know why they are called Melting Moment Cookies. It's not because they melt in your hand while forming them, at least I don't think it's the reason. The reason is, these cookies melt in your mouth. It's like you bite in air. Although you can't really bite in the air. 
So, I can recommend this recipe.
And I didn't have to throw everything away, like the Gummies. :/
